Our Jerk is excellent on chicken, pork, tenderloin, and fish. Just rub on, marinate for a few hours, and grill. Add juice of a lemon to chicken or fish for unique Jamaican flavor. Scallions, pimento, garlic, thyme, onion, and spices.
TO USE: Sprinkle on meat, 1 teaspoon per pound, marinate, let stand at least 30 minutes (the longer the better!) and cook as desired.
