Tangy Cari-bee Mocktail


A bright, citrus-forward refresher with a smooth honey finish and a subtle island kick.

Ingredients

  • 1 cup filtered water
  • ¼ cup Spicy Caribbee honey (plus more to taste)
  • 4 fresh sage leaves
  • 1 cup fresh mandarin or tangerine juice
  • 1 tablespoon fresh lemon juice
  • Ice
  • Mandarin/tangerine slices, for garnish

Optional:

  • Fresh grated ginger or a tiny pinch of cayenne

Instructions

  1. In a small pot over medium heat, bring the water to a gentle boil. Add the sage leaves and Spicy Caribbee Honey, stirring until dissolved. Let it simmer for 2–3 minutes, then remove from heat, cover, and let steep for about 5 minutes.
  2. In a bowl or pitcher, combine the fresh mandarin (or tangerine) juice and lemon juice. Stir well.
  3. Remove the sage leaves from the honey mixture and let it cool slightly. Pour it into the citrus mixture and stir to combine. Taste and adjust with more honey if needed.
  4. Fill a glass with crushed ice. Pour the citrus-honey mixture over ice until about 3/4 full.
  5. Add a slice of mandarin or tangerine and, if you want, a sage leaf. Serve immediately.

Spicy Caribbee Note:

The honey does the heavy lifting here — smooth, slightly floral, with that signature kick that lingers just enough. If you want to lean into it, add a touch of ginger or cayenne for a brighter heat.
