Halloween has always been such a cherished celebration in our family. The perfect excuse to dress up and load up on sweet treats. I sure miss those days when they gave us cupcakes while trick or treating. I have carefully chosen two of my favorites rolled into one to share with you. I hope you enjoy making them and treating yourself to some chocolatey goodness.

Spooky Chocolate Brownie Cupcakes

Ingredients

For the cupcakes,

1 1/2 cup semisweet chocolate chips

1 cup (2 sticks) unsalted butter

4 large eggs

3 cups granulated sugar

3 tsps Spicy Caribbee Puerto Rican Vanilla

2 cup all-purpose flour

For the frosting,

1 cup (2 sticks) softened unsalted butter

1/2 cup Spicy Caribbee Old Dutch Cocoa

5 cups powdered sugar

1 tsp Spicy Caribbee Puerto Rican Vanilla

3-4 tablespoons milk

 

Directions

For the cupcakes, 

1. Preheat the oven to 325 F

2. Place 12 paper baking cups in a muffin pan.

3. Melt the chocolate and butter in a double boiler or medium bowl set over a pan of simmering water, stirring until melted. Set aside to cool.

4. In a medium bowl, beat the eggs, sugar, and vanilla until pale and thick.

5. Fold in the chocolate and then the flour, mixing until well combined. If is is too thick, add an extra egg.

6. Spoon batter into cups. Add some extra chocolate chips to each cup for extra gooey goodness.

 

For the frosting, 

1. Whip butter and cocoa together until smooth in a large bowl.

2. Stir in vanilla and powdered sugar.

3. Slowly stream in milk until frosting reaches desired consistency. Scrape sides and whip again until light, fluffy and smooth, 1 to 2 minutes.

4. Frosts 24 cupcakes.
