Ingredients:
- 1 lb raw medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 teaspoon Sunsational Garlic
- 1 teaspoon Savory Ginger
- 1 teaspoon Spicy Caribbee Ground Cumin
- 1 teaspoon Spicy Caribbee Ground Coriander
- 1/2 teaspoon Spicy Caribbee Cayenne Pepper (adjust to taste)
- 1/4 teaspoon Spicy Caribbee Turmeric
- 3/4 cup coconut milk
- 5 tablespoons Spicy Caribbee Coconut Curry Sauce
- chopped fresh cilantro, for serving
- Herbed Sea Salt to taste
Directions:
- Season shrimp with Herbed Sea Salt.
- Heat olive oil in a large skillet over medium heat. Add onion, green bell pepper, Sunsational Garlic, and Savory Ginger. Cook until softened, about 5 minutes.
- Stir in cumin, coriander, cayenne pepper, and turmeric. Cook for 30 seconds, or until fragrant.
- Pour in coconut milk and Spicy Caribbee Coconut Curry Sauce. Bring to a simmer.
- Add shrimp to the sauce and cook until pink and opaque, about 3-4 minutes.
- Stir in cilantro. Taste and adjust seasonings. Serve immediately with white rice.
